Moroccan mint (Mentha spicata var. crispa) is a pretty, compact mint variety that looks great in your garden and is used to flavor food, make tea, or simply for its lovely scent on the patio. Moroccan mint tea is very popular in Arab countries, where the drink often has a ceremonial purpose, especially when prepared by the head of the house for guests. Combining imported ingredients (tea from China and imported sugar) with a local ingredient (fresh mint), Moroccan mint tea is an early example of globalization in cuisine. Also known as Tuareg tea, it is said of the tea: "The first glass is as bitter as life, the second is as strong as love, the third is as soothing as death."
