Borage, also known as starflower, is an edible ornamental and medicinal plant that has been praised by some of history's most famous herbalists. In John Gerard's "Herball," we find the saying "Ego borago, gaudia semper ago": "I, borage, always bring courage." And according to Pliny the Elder, when borage leaves and petals are added to wine, "it makes men and women glad and cheerful, and drives away all sadness, indolence, and melancholy." With such accolades, it's no surprise that the Blue and White Flowered Mix variety has become a favorite in modern mixology, used to garnish cocktails like the gin-based Pimm's Cup.
